Savory & Simple Winter's Day Soup
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 medium sweet onion, chopped
  • Kosher salt and Safeway Coarse Ground Black Pepper
  • 2 medium yellow potatoes
  • 2 carrots
  • 1 teaspoon dried sage
  • 6 cups Safeway Chicken Stock
  • 2 cups Safeway SELECT® Spiral Sliced Honey Glazed Ham, cut in ½-inch dice
  • Safeway SELECT® Artisan Como, Asiago, or Kalamata Olive Bread, toasted (optional)

In a large pot or wok, melt the butter. Add the garlic, onions, and season with salt and pepper. Stir to blend, cover, and simmer over medium heat until onion is wilted (about 5 minutes).

While onions wilt, cut potatoes and carrots into ¼-inch dice; add, with sage and ¼ cup of the chicken stock, to the soup pot; cover and simmer until carrots are almost tender, about 5 minutes.

Add ham and remaining chicken stock, stir to blend, then cover and increase heat until mixture comes to a boil.

Cover and simmer to blend flavors, about 20 minutes.

Serve with crusty bread for dipping.
