Extra-Cheesy Mac 'n' Cheese 'n' Ham
  • 2 7.5-ounce packages Safeway Original Macaroni and Cheese Dinner
  • ½ cup plus 1 tablespoon Lucerne® Sweet Cream Butter or Safeway
  • Butterlicious® 70% Vegetable Oil Spread
  • 2 cups Safeway SELECT® Spiral Sliced Honey Glazed Ham, cut in ½-inch cubes
  • 2 tablespoons O Organics™ Fresh Chives (or 2 teaspoons driedc hives), plus additional sprigs for garnish
  • ½ cup Lucerne® 1% Reduced Fat Milk
  • ½ teaspoon ground mustard
  • 1¼ cups Lucerne® Shredded 2% Milk Cheddar Jack Cheese

In a large pot, bring 3 quarts water to a rolling boil. Cook both packages of macaroni (do not add cheese sauce packets) according to package directions.

While macaroni cooks, melt 1 tablespoon butter in another large pot. Add ham and chives and cook, stirring occasionally, just until meat begins to brown, about 3 minutes set aside. When macaroni is cooked and drained, return it to pot; add milk and both packages of sauce mix, and mustard. Add ham and 1 cup of cheese; blend.

Coat a 2-quart casserole dish with nonstick cooking spray; pour macaroni mixture into casserole, sprinkle with remaining cheese, and place under broiler until lightly browned (about 5 minutes).

Garnish with chive sprigs.
